SPROUTED MUNG ‘BREAD’ OR PANCAKE MIX

INGREDIENTS

3 cups mung sprouts
1/2 cup carrots and/or zucchini, finely chopped
1 to 1 and 1/2 teaspoons baking soda
1/2 teaspoon mineral rock salt
1 teaspoon cumin powder
1 teaspoon fennel powder
1/2 teaspoon coriander powder
1/2 teaspoon turmeric powder
just enough water to blend
2 cups corn flour

DIY: Sprout 1 and 1/2 cups green mung beans (which usually takes a couple of days) in preparation for this dish. That will give you the 3 cups of sprouts needed for this recipe.

PREPARATION

Then once the sprouts are ready, lightly oil a baking dish with coconut oil or ghee and heat the oven to 375 degrees. Blend the first set of ingredients in a blender until smooth.

Pour the blended ingredients into a bowl and gradually add about 2 cups of  corn flour. You’re aiming for a thick consistency with a texture closer to cake batter (but not as smooth) than bread dough.

Pour the batter into the lightly oiled baking dish and place into the hot oven. It is cooked when the sides of the bread pull away slightly from the pan and the center is firm. It should be nicely soft and moist inside, but not gooey or sticky.

This bread is divine when topped with an avocado dressing made by simply mashing an avocado and adding salt, pepper, and just enough lime juice or water to make a creamy sauce.

The same mixture can also be used to make pancakes. Just pour the desired amount onto a pre-heated frying pan that has been lightly oiled with coconut oil or ghee. Then place a lid on the pan and allow the pancakes to cook through on one side before turning them over to cook on the other.

Note: This is a relatively high-protein bread substitute for people who can’t or don’t want to eat wheat or yeast. It is best eaten fresh, but if you have leftovers, they’re nicest when toasted.

Mung beans are sattvic and balancing to all constitutions. They are light, easily digestible, and a good food for cleansing, especially when combined with digestive spices. Sprouting mung beans combines the advantages of eating the whole beans with the lightness and cooling energy of sprouting. Some people find that eating too many mung spouts gives them gas and makes them feel ungrounded. In this recipe, they’re blended and cooked with spices such as cumin and turmeric, making them more digestible.

MASALA RICE (VEGETABLE SPICED RICE)

Masala Rice (Vegetable Spiced Rice)

Serves 4 to 5

This versatile dish is ideal for late spring or early summer. It’s also a delicious dish that cooks quickly, at the end of a long day.

INGREDIENTS

2 cups basmati rice
1/2 cup zucchini, chopped
1/2 cup green beans, chopped
1/2 cup fresh peas (carrots, potatoes, cauliflower, or broccoli may be substituted according to constitution)
1/2 tsp cumin seeds
1/2 tsp black mustard seeds
1/4 tsp turmeric
1 pinch asafoetida (hing)
2 pinches salt
12 – 14 cloves, whole
1 inch piece of fresh ginger, peeled and diced fine
2 cinnamon sticks, broken into small pieces
6 – 10 bay leaves
10 cardamom pods, whole
1 pinch cayenne
3 cloves garlic, chopped fine
1/2 cup ghee
1 Tbs coconut, shredded
1/2 cup cilantro, fresh, chopped (divided use)
1 lime

PREPARATION

Wash the rice two times. Wash and chop vegetables.

Put the chopped ginger and ¼ cup of the cilantro in a blender with coconut and ½ cup of water. Blend until liquid.

Heat the ghee in a 3-quart saucepan and add the mustard seeds, cumin seeds, turmeric, and hing, and cook until the mustard seeds pop. Then add the cloves, bay leaves, cardamom, and cinnamon. Heat until the spices are fragrant then pour in the blended mixture. Add the garlic and salt, and then cook until the garlic browns slightly. Stir in the vegetables and rice, mixing thoroughly. Add cayenne. Pour in 5 cups of water and bring to a boil. Turn down the heat to a simmer and cover loosely.

Cook until the vegetables are tender and the rice is cooked, about 18 to 20 minutes. Turn this out into a serving dish and squeeze fresh lime juice over it. Sprinkle chopped cilantro and coconut over the top before serving.

UPMA (SAVORY BREAKFAST)

Upma (Savory Breakfast)

A delicious, savory south Indian breakfast dish, upma is easy to prepare and can be used as a side dish for other meals as well.

Roasting helps diminish the allergens, glutamine and other kapha qualities of the wheat.

Kapha can eat this in moderation if they increase the mustard seeds and chili.

Balancing for all three doshas

INGREDIENTS

1 cup cream of wheat
1/2 cup safflower oil or ghee
1 tsp. black mustard seeds
1 tsp. cumin seeds
1 pinch hing
5 curry leaves
1/2 tsp. turmeric
1 small green chili, chopped fine
1 small onion, chopped
1/4 cup cilantro leaves, chopped
1/2 tsp. salt
3 cups water coconut and cilantro or dhanya leaves for garnish

PREPARATION

Roast the creamed wheat in a heavy, dry pan over a medium heat until slightly brown. Stir or shake frequently. Set aside in a bowl to cool.

Heat a saucepan on medium and add the oil or ghee, then the mustard and cumin seeds. When the seeds pop, add the other spices except for salt. Stir in the onion, cilantro and chili and cook until the onion is browned. Add the salt and water and bring to a boil. Stir in the roasted mush very slowly. Let boil for 1-2 minutes while stirring continuously to prevent lumps from forming.

Garnish with coconut and chopped cilantro or dhanya leaves.

Give each serving a squeeze of fresh lime.

PEAS PILAU

Peas Pilau

Washing Rice

Wash the rice twice and drain. To wash rice properly, put the measured rice in a saucepan and fill to the top with water. Stir and gently pour off the water until the rice starts to escape. Fill again with water and stir 2 or 3 times. Gently pour off the water and put the last of the rice and water through a colander to drain completely. Rinse the last grains of rice out of the pan into the colander.

INGREDIENTS

2 Tbs butter or ghee
1 hot green chili OR 1/2 bell pepper, finely chopped
1/4 to 1/2 cup onion, finely chopped
1/2 to 1 tsp ginger, fresh, finely chopped
4 cardamom pods
4 cloves, whole
2 cinnamon sticks, broken into small pieces
1/2 tsp turmeric, powder
2 and 1/4 cups water
1 cup basmati rice
1 cup green peas, fresh or frozen
1 tsp salt

PREPARATION

If using frozen peas, put them in a strainer and rinse with cool water. Set aside.

Rinse the rice as above and set aside.

Melt the ghee in a large pot over low heat. Add the pepper, onion, ginger, cardamom, cloves, and cinnamon. Stir continuously for 5 to 7 minutes, taking care not to burn the ghee. When the onions are soft, add the rice. Stir until the rice is fully coated with the mixture. If using fresh peas, add them now. Add the turmeric.

Stir the rice for 5 minutes over low heat, and then add the water and salt. Increase the heat slightly and bring to a boil. Cover and turn down the heat to a simmer. After 15 minutes, add the frozen peas (if using frozen peas) and stir in gently. Cook partially covered about 5 minutes more, until all the water is absorbed and the rice is soft and fluffy. Cover and let rest 5 – 10 minutes.

Turn the rice out onto a platter to serve. Fluff gently with a fork to mix in the spices and peas, taking care not to break the rice grains.

TURMERIC PICKLE

Turmeric Pickle

Serves 4

Fresh turmeric root looks a little like ginger, but inside it can be red or yellow. The red is called kunkum and is considered sacred. Only the yellow root is used in cooking and medicinally.

Turmeric is the best medicine in Ayurveda. It cures the whole person. Turmeric is pungent, bitter, astringent and heating and has a pungent vipaka.

Turmeric can be used by all doshas. It may stimulate vata, but doesn’t aggravate it (cause an imbalance). Turmeric helps digestion, maintains the flora of the intestine, reduces gas, has tonic properties and is an antibiotic.

Turmeric can be used for cough, sty, diabetes, hemorrhoids, cuts, wounds, burns and skin problems. It helps reduce anxiety and stress.

INGREDIENTS

1 cup fresh turmeric roots
3 Tbs oil
1 tsp black mustard seeds
1 pinchhing
1 tsp pickle masala powder
2 pinches salt

Turmeric root and pickle masala powder are available from most Indian grocery stores. Turmeric root looks a little like a small ginger root but is brilliant orange under the skin.

Pitta should use less hing and mustard seed.

PREPARATION

Wash and thoroughly dry the turmeric roots. Peel and chop very fine.

Heat the oil and add the mustard seeds and hing. Stir until the seeds pop. Cool and pour over the chopped turmeric.

Add the pickle masala powder and salt. Stir well.

Cover and store in refrigerator. Keeps for up to 1 month AS LONG AS not a drop of water gets into the pickle, such as using a wet spoon to get the pickle out of the jar. The water will cause fermentation and the pickle will spoil.

Eat in very small quantities with the meal.

Note: People with hypoglycemia can use small amounts of turmeric in cooking but should not take it in quantity.

PEACH CHUTNEY

Peach Chutney

Serves 4 to 6

A fresh peach should be soft to the touch and eaten over the sink because it is so juicy. According to Ayurveda, peaches are good for those who suffer from loss of appetite due to excess heat in the system. This can come from any type of high pitta such as fever or a bladder infection but can be from something as simple as the annual end-of-the-summer rise in heat within the body. Peaches will calm excess vata or wind, but in excess can increase kapha or mucous. When in season, eating two or three peaches a week is good for everyone.

Peaches can be used in fruit salad with nuts or seeds. They can also be used with cooked vegetables so here is an easy peach chutney recipe.

INGREDIENTS

3/4 cup water, hot
1 cup maple syrup
3 Tbs. tahini (or almond/peanut butter)
1/2 tsp. salt
2/3 cup ghee
1 tsp. freshly squeezed lemon, lime, or orange juice

PREPARATION

Place all ingredients except the chives and cilantro into a saucepan and simmer over medium heat about 20 minutes, while stirring occasionally.

The fragrance of the spices will bloom and this tells you that the dish has cooked enough.

Remove from the heat and add the cilantro and chives.

Place in a serving bowl, cover and allow to sit at room temperature until needed.

Alternatively, place in a jar, allow it to cool completely, then cover and refrigerate, if made a day ahead of time.

Serve over your favorite dal and rice, or vegetables.

Pitta might want to decrease the chili, salt, and mustard seeds even though the cilantro is very cooling.

HEALTHY POWER BARS “OJAS BALLS”

Healthy Power Bars “Ojas Balls”

Makes about 2 dozen balls

Modern treats such as “energy,” “power,” or “green” bars have taken the place of yesteryear’s granola bars on natural food store shelves. Although admittedly convenient and quickly satisfying to a between-meal hunger, unfortunately these bars offer little genuine nutrition and therefore little genuine energy. In addition, their packaged life robs them of prana and their fragile ingredients such as seeds, nuts and grains turn rancid as the bars linger on store shelves for months on end. What’s more, from an Ayurvedic approach, these highly processed bars can be a cause for agni to break down as well as vata due largely to their dense nature, lack of prana and odd combinations of poor quality ingredients, not to mention that they often get gobbled up on the go.

The following energy-giving recipe provides a fresh, delicious, simple, and nutrient-rich alternative to lifeless, stale and over-processed store-purchased power bars mistakenly promoted as health giving. Additionally, this recipe is gluten-, nut-, and dairy-free, as well as gentle on agni.

A coffee grinder, blender, or small food processor is indispensible for grinding the seeds. From a holistic nutrition point of view, it is best to purchase nuts and seeds in their raw form (unsalted and unroasted) and dried fruits that are sulfur and preservative-free. These power-packed balls travel well in a waxed paper bag and will keep for a few weeks refrigerated.

INGREDIENTS

1/2 cup dried figs
1/2 cup dates
1/2 cup dried apricots
1/2 cup pumpkin seeds, lightly toasted in a dry skillet
1/2 cup sunflower seeds
1/2 cup white sesame seeds
1 tsp. ground cardamom
1 pinch mineral salt
1 tsp fresh organic orange zest (optional)
1/8 to 1/4 cup extra virgin, cold-pressed olive or coconut oil
1/3 cup whole white sesame seeds, ground flax seeds, or unsweetened, shredded dried coconut to coat the finished balls (optional)

PREPARATION

Lightly toast the pumpkin seeds in a skillet without oil. This helps to remove any traces of E-coli on their skins. Remove from skillet and transfer to a bowl. Allow to cool. Meanwhile, separately grind the sunflower seeds and the sesame seeds into a coarse powder, reserving each of the ground seeds in a medium-sized mixing bowl. Grind the pumpkin seeds once they have cooled. Add the cardamom and salt to the seeds and combine well. If you are adding carob, cacao, and/or spirulina powder (see below), do so now and mix well.

Drain the dried fruits, reserving the soaking water for another use (such as drinking it on an empty stomach). Add the soaked dried fruit and the optional orange zest to the ground seed mixture. Incorporate the ingredients using the back of a fork to obtain a very coarse mixture. Now add enough oil to obtain a thick, paste-like dough.

Using a teaspoon, scoop up a spoonful of the mixture and roll into a walnut-sized ball in the palms of your hands. If the balls don’t easily stick together, add a bit more oil. If too wet, grind more sesame or sunflower seeds to thicken the mixture. For a nutritive, decorative touch, roll the balls in the whole sesame seeds, ground flax seeds, or shredded coconut. This also prevents the balls from being sticky on the outside.

If you don’t have time to roll the balls, opt to make bars by pressing the mixture into a lightly oiled, glass 9 x 9” baking dish. Cut and enjoy as needed.

Store in an airtight glass container in the refrigerator.

Once you’ve made this recipe, here are some ideas to further “empower” the balls:

exchange raisins, goji berries, cranberries or other dried fruits for the ones suggested above

substitute ground cashews or soaked, peeled and ground almonds for the seeds

add ground flax or hemp seeds to the list of ingredients for additional fiber and EFA’s

transform the balls into a healthy truffle by adding 3 Tbs. coarsely ground cacao nibs, raw cocoa or carob powder

add 2 Tbs. spirulina powder for an additional nutritional punch

CARROT SUBJI

Serves 4

Carrots have many qualities—sweet, bitter, pungent, heating, light, sharp. For pitta, go easy on the chili, garlic, mustard seeds, and hing and eat in moderation. Cooked carrots are sweet and heating with a pungent vipaka, so this recipe is particularly balancing for vata and kapha.

Medicinal Uses: A good food for hemorrhoids, water retention, and blood building. It is an excellent brain tonic and aids deep thinking.

INGREDIENTS

4 cups carrots
1 small handful fresh cilantro, chopped
1/2small green chili, chopped
1 and 1/2 inch ginger, fresh, finely chopped
2 cloves garlic, chopped
2 Tbs coconut, shredded, unsweetened
1/2 cup water
1 Tbs ghee
1/2 tsp black mustard seeds
1/2 tsp cumin seeds
1 pinch hing
1/4 tsp salt

PREPARATION

Wash and grate the carrots medium fine.

Put the cilantro, chili, ginger, garlic, coconut, and water in a blender and blend on high until liquid.

Heat a pot on medium and add the ghee, mustard seeds, cumin seeds, and hing. When the seeds pop, add the blended mixture and salt, then brown very slightly.

Stir in the carrots, cover and cook on medium heat until just tender, about 10 minutes. Stir occasionally.

NUT CAKE WITH CHOCOLATE DRIZZLE

Nut Cake with Chocolate Drizzle

INGREDIENTS

Whisk together in one bowl (wet)

3/4 cup water, hot
1 cup maple syrup
3 Tbs. tahini (or almond/peanut butter)
1/2 tsp. salt
2/3 cup ghee
1 tsp. freshly squeezed lemon, lime, or orange juice

Sift together in another bowl (dry)

2 cups flour (spelt, whole wheat, brown rice and barley, or similar)
3 or 4 Tbs. arrowroot powder
plus any dry spices used
(see Optional ingredients below)

Stir into flour mixture

½ cup or more nuts, roughly ground in blender (walnuts, sunflower seeds, pecans, almonds, etc.)

Optional, select one

1/2 tsp. ground coriander
1/2 tsp. vanilla extract
1/2 tsp. lemon or lime rind, grated
1-2 Tbs. candied ginger, chopped

PREPARATION

Gently whisk the dry ingredients into the wet. Add the chopped ginger, if using. Pour into a round cake pan lined with parchment paper. Bake at 350° for 45-55 minutes. Cool for 10-20 minutes, then remove from pan onto cooling rack.

Melt 1-2 oz. of a natural chocolate bar in a small pan on top of the stove, with a little ghee. You can also add a handful of coconut.

Spread the warm chocolate mix on top of the cake and run under a hot broiler for ½ to 1 minute. If you want a burnt chocolate effect, broil it a little longer.

Decorate with soaked almonds, pear slices, edible flowers, dried fruit, nuts, coconut, or whatever inspires you.

Note: Natural sugars, fresh ground nuts, whole grain flour, healthy oils, and a flavor spike from classic ingredients like ginger and coriander make this a cake you can serve anyone with pleasure.

Of course, sugar, chocolate, flour, and nuts tend to increase kapha, so one slice should be enough for them. The ghee and nuts will be grounding for vata and the right spices such as vanilla extract or coriander would be helpful to pitta types.

For the chocolate, use a bar that has at least 60% cacao. Dark chocolate has more anti-oxidants than milk as well as less sugar. A little goes a long way though and pitta types should be careful as should kaphas.

Coughing is one of the most common health problems. When there is a blockage or irritant in your throat or upper air passages, your brain thinks a foreign element is present and tells your body to cough to remove that element.Some of the symptoms of a cough are itchy throat, chest pain, and congestion. Instead of using over-the-counter cough syrups, you can try some natural cough treatments using readily available ingredients in your kitchen.

1. Turmeric

The herb turmeric has a therapeutic effect on coughs, particularly a dry cough.

  • Heat half a cup of water in a boiling pot. Add one teaspoon turmeric powder, and one teaspoon black pepper. You may also add cinnamon sticks. Boil this for about two to three minutes. Add one tablespoon of honey. Drink this daily until the condition improves.
  • Alternatively, make an herbal tea by adding one teaspoon of turmeric powder and one teaspoon of carom seeds to a cup of water, and boil it until water reduces to one-half cup. Add some honey and drink this herbal solution two to three times a day.
  • Another way to use turmeric is to roast turmeric root and grind it into a smooth powder. Mix it with water and honey, and drink it twice a day.

2. Ginger

Ginger is one of the most popular natural cures for a cough.

  • Cut fresh ginger into small slices and crush them slightly. Put them in a cup of water and bring to a boil. Drink this herbal solution three to four times a day for relief from sore throat, non-stop coughing and even congestion. You can also some lemon juice and honey to it.
  • Another option is to chew fresh raw ginger on and off throughout the day to reduce your cough.

3. Lemon

Lemons can be used in a variety of ways for curing coughs. Lemons have properties that reduce inflammation and also provide a dose of infection-fighting vitamin C.

  • A simple cough syrup can be made by combining two tablespoons of lemon juice and one tablespoon of honey. Drink this healthy syrup several times a day.
  • Another way to use lemons is to blend lemon juice with a little honey and a pinch of cayenne pepper and then drink it.

4. Garlic

Garlic has both antibacterial and antimicrobial components that help treat coughs.

  • Boil two to three cloves of garlic in a cup of water and add a teaspoon of oregano. Allow it to cool to room temperature, add some honey and drink it. This will help your breathing and alleviate other cough symptoms.
  • Eat a clove of crushed garlic mixed with a few drops of clove oil and some honey for sore throat relief. You can also use garlic in your cooking.

5. Onion

One of the simplest home remedies for a cough is to cut onions. Breathing in the strong vapors can help stop coughing.

  • You can also make a cough syrup from baked onion juice, comfrey tea and honey. Drink it daily to get relief from a dry cough.
  • Another option is to combine one-half teaspoon of onion juice with one teaspoon of pure honey. Swallow this solution at least twice a day to alleviate a cough and soothe your throat.

6. Hot Milk with Honey

Hot milk with honey can relieve a dry cough and reduce chest pain you may be experiencing from continuous coughing. For best results, drink it before going to sleep. For added benefits from the analgesic properties of honey, swallow a teaspoon of plain honey on empty stomach. This will help clear the mucus and soothe your throat.

Curry leaf is also a wonderful agent that can help people living with diabetes stop their nightmare of dealing with the hateful and stubborn symptoms of this dangerous condition. Aromatic curry leaf might also act as an effective agent which works well in controlling the high blood sugar issue. Many minerals contained in curry leaf can aid in maintaining normal blood sugar levels. Moreover, it can influence the carbohydrate metabolism as well.On the other hand, curry leaf can help to reduce the risks of oxidative stress.

A research published in the Journal of Ethnopharmacology in 2007 claimed that the extract of this herbal remedy can help to reduce the seriousness of diabetes.

Ceylon cinnamon, also known as True Cinnamon or Mexican Cinnamon, is the safest type of cinnamon. But how can you identify it? You cannot tell the difference when you buy cinnamon in powder form. But when you buy cinnamon sticks, the one with the thin layer is Ceylon cinnamon.

Drinking guava leaf tea for 12 weeks lowers the blood sugar levels without increasing insulin production.

For treating diarrhea, boil 30 grams of guava leaves with a handful of rice flour in 1-2 glasses of water and drink this concoction twice a day. In case of dysentery, cut the roots and leaves of guava plant and boil them for 20 minutes at a temperature of 90 degrees Celsius. Strain the water and drink in moderation until relieved.

5. Aids in Digestion:

Guava leaf tea aids in digestion by stimulating digestive enzyme production. The powerful antibacterial agents kill bacteria in the lining of the gut and stop proliferation of toxic enzymes by bacteria. Guava leaves are particularly beneficial in case of food poisoning as well as soothing, vomiting and nausea. To relieve stomach ache, boil 8 pieces of guava leaves in 1.5 liters of water and drink thrice a day.

6. Treatment of Bronchitis:

1. Cloves Fight Inflammation

Studies have shown that the eugenol in clove works as a powerful anti-infammatory agent. This is also true with clove essential oil, one form of clove that is widely available. Clove also fights inflammation of the mouth and throat. In yet another study by the University of Florida, subjects who consumed cloves on a daily basis had reduced levels of a specific pro-inflammatory cytokine in just seven days. Lowering these cytokines can significantly reduce the likelihood of arthritis and joint pains. In fact, long-term inflammation can lead to arthritis – and taking clove regularly could be a good step in preventing that.

2. Help Fight Cancer

One study showed how clove extract could prevent tumor growth and induce cancer cell death. The anti-cancer properties of clove can be attributed to eugenol, which had even shown to benefit in the case of esophageal cancer.

The oil that is released fights the pain. You can use a whole clove for 30 minutes, before discarding it and repeating the process with a new one.

If you have a much severe toothache, such that grinding cloves with your teeth is not possible, you can use crushed cloves. Crush the whole cloves and place the powder on the affected tooth.

An Iranian study also speaks about the analgesic affects of clove, which can help relieve toothache. Cloves can also combat bad breath.

Alternately, you can also add two drops of clove oil to a tablespoon of coconut oil and gently massage over your forehead and temples.

Studies have shown how oral ingestion of cloves can enhance testicular function and ultimately boost testosterone levels. Though the study has been carried on mice, the potential for humans is encouraging.

This seed is the best natural way to cure cold symptoms such as a blocked nose. Take a steam from ajwain seeds infused in hot water for best relief.

 8. Itching, Boils & Eczema:

Grind ajwain seeds with lukewarm water to make its paste. Apply this paste on any affected part of the face or body. Also, try washing the affected part with the ajwain water for best results. In case of swelling due to pimples or eczema, make the paste of ground carom seeds with lemon juice. It will be helpful in removing the swelling.

Mix mustard oil with ground carom seeds. Dip cardboard pieces in this mixture and tie in the corners of your room. This will help you get rid of the mosquitoes from the room. 

16. Lost appetite:

Mix and grind carom seeds, fennel seeds, dried ginger powder, salt and black cumin seeds. Add hot ghee to that mixture. Mix the mixture with cooked rice. This will surely increase lost appetite.

17. Piles:

Mix dried pomegranate flowers, poppy seeds and dried neem leaves. Consume this mixture with milk twice a day during bleeding piles. Drinking buttermilk with carom seeds powder and rock salt after lunch/dinner is useful for minimizing the condition.

18. Heals pain:

Mix carom seeds, onion seeds, fenugreek seeds with saboot isabgol. Grind them all and consume 1 tbsp of this powder everyday in the morning. Consume this on an empty stomach for best and positive results.

19. Sexual disability:

Roast carom seeds with some tamarind kernels and clarified butter. Grind them well, take 1 tsp of this mixture and add to a glass of milk and honey. This is a proven method to reduce sexual disability. Consume this regularly at night for effective results.

20. Breastfeeding:

Carom seeds with fennel seeds are used to make ajwain aur saunf ka pani. This is useful to cleanse uterus and increase milk production. Add 1 tbsp of fennel seeds with ½ tbsp carom seeds and 1 litre of water. Boil them for 5 minutes and cool it. Cool and consume this everyday for best results.

21. Menstrual cramps:

Carom seeds acts as a nerve tonic, hence it can lower menstrual cramps during menses. Thus, the benefits of carom seeds are quite wonderful. You can also apply the oil on your muscles for quick relaxation.

22. Stomach problems:

Soak three teaspoon of carom seeds in lime juice and dry it in shade. Grind this and mix some black salt. Consume this twice a day with lukewarm water. This is a useful method to cure loss of appetite, flatulence and other stomach problems. Do this daily till you get the results.

23. Belching:

Many gas related problems can be cured by a mixture of dried ginger, carom seeds and black salt. This is useful to treat problems like gas, indigestion, and belching. You can also try to add this in warm water with cardamom and drink it.

24. Migraine:

Wrap carom seeds in the tissue paper and smell this. It is useful to reduce migraine headache. Also they can be burnt and inhaled for other problems related to head.

25. Heart health:

Consume one tablespoon of carom seeds with warm water to stimulate the heart. It is also beneficial to cure chest pain. You can mix one teaspoon of jaggery with some carom seeds to get quick relief.

26. Alcoholic:

This herb is also beneficial for the people who want to get rid of alcohol. Chewing carom seeds daily can help to get rid of alcohol craving.

Roast ajwain seeds with some tamarind kernels and clarified butter. Grind all of these ingredients. Grind them well, take a tsp of this mixture and add to a glass of milk and honey. This is a proven method to improve sperm count and treat premature ejaculation. Consume this regularly at night for effective results.

28. Insecticide:

They have many therapeutic uses as well as they are used widely in food preparations. Carom seeds are also used as an insecticide. Apart from this, this is an orthodox method for treating poisonous insect bites.

29. Used in cooking:

These seeds are widely used in Indian cooking as a spice. They can be roasted, fried in oil, or added in “panchphoran”. Ajwain is used in small quantity in making biscuits, snacks, sauces, soups, soft drinks and pickles for good digestion.

30. Pimple:

Apply powdered carom seeds with yogurt on your face. Keep it for half an hour and wash off with warm water.

31. Reduce weight:

Drink half glass of water with soaked carom seeds on an empty stomach. This will dissolve the fats. Consume 1tsp of carom seeds on an empty stomach every morning. It helps to lose about 4 to 5 kg in a month.

32. Bed Wetting:

Take 50 grams black sesame, 25 grams carom seeds and 100 grams of jaggery. Mix them well. Consume this mixture 1tsp twice a day. This will help in treating frequent urination and bedwetting.

33. Ear pain:

Heat 1tsp garlic and 2tsp carom seeds in sesame oil, till they are red in color. Cool it and strain to put some drops into the ears. This is also useful to treat boils in ears.

34. Flatulence:

Soak 3 tbsp of carom seeds in lime juice. Dry this in the shade. Powder and mix it with little black salt and consume 1 tsp twice a day with warm water.

35. Joint pains:

Mix shatavari, black cumin seeds, fenugreek seeds and carom seeds. Powder this and take ½ tsp every morning.

36. Greying of Hair:

Curry leaves – 2 to 3

Dry grapes – 2

Carom seeds – 1 pinch

Sugar– to taste

Method: Add curry leaves, dry grapes, carom seeds in one cup of water and cook. Add sugar if required for taste. Drink 1 glass a day. This will stop greying of hair.

37. Colic:

Boil 1 tsp of fennel seeds and ½ tsp of carom seeds in ½ liter of water. Cook it on a low flame for 5 minutes. Cool and strain it. Drink a cup daily after meals.

38. Diabetes:

Dry few neem leaves in the shade. Powder and store in a jar. At night, mix 1 tsp of the powder in hot milk with ½ tsp of powdered cumin and carom seeds. Consume it for 30 days.

39. Paralysis:

Carom seeds soaked in water and consumed daily can be useful in treating paralysis, trembling and shaking.

40. Eye cleanser:

Boil handful of carom seeds in a water. Cool and strain. Wash your eyes with this water to clean it.

41. Deafness:

Carom seeds have been used in ancient times to cure deafness. Put few drops of this oil in your ears to get rid of this condition.

42. Body cleanser:

Consumption of carom seeds tea can help in cleansing body toxins. Thus, this can reduce many skin and health related problems. This helps to purify blood and improve the blood flow in body.

43. Calculus:

Consume 6 grams of carom seeds daily to get rid of this disease.

44. Menorrhagia:

Soak 25 gm of carom seeds in a mud pot filled with water for whole night. Grind this and drink in the morning.

45. Urticaria:

Consume 1 gram of carom seeds with 3 grams of jaggery. This is a useful remedy to cure this

1. Keep them away from humidity and also from direct sunlight.
2. Carom seeds cannot be stored for a long time.
3. Avoid over consumption. It can lead to nausea, vomiting, skin irritation, allergy and headache in some people.
4. Proper intake doesn’t have any side effects.
5. Store them in air-tight bottle in a cool and dry place.
6. People with liver disease and hyperacidity should avoid this herb.

Medication for treating Veins and darkening of skin

Mung Beans & Rice

Makes 8 servings  (You may therefore adjust the quantities for your personal needs)

1 Cup Mung Beans

1 Cup Basmati Rice

9 Cups Water

6-7 Cups assorted Vegetables

Masala Mixture:

¼ Cup Ghee

4-5 Cloves of fresh Garlic, crushed in a press

2 Onions, Chopped

1 finger fresh Ginger root, peeled and minced

1 ½ Tsp Tumeric

1 ½ Tsp Cumin powder

¾ Tsp Ground Coriander seed

Seeds of 5 Green Cardamon Pods (or ½ tsp powder)

1 Tsp Black Pepper

½ Tsp Crushed Red Chilies (more if you like spicy)

1 – 1 ½ Tbsp Sea Salt

This recipe goes much smoother if you prepare everything before you begin.

· Bring water to a light boil in a large stew pot.

· Wash Mung beans, carefully removing any tiny stones.

· Rinse Basmati Rice at least three times to remove starch.

· Set mung beans and rice aside.

· Chop assorted vegetables.

(Prepare the Masala Mixture while waiting for water to boil)

· Heat Ghee (or Oil) in a large frying pan (preferrably cast iron.)

· Add garlic (using press), chopped onions, and Ginger and saute under a medium

flame.

(When water begins to boil)

· Add mung beans and assorted vegetables to boiling water.

· Reduce flame to simmering and cover.

· Back to Masala Mixture : When Onions, Garlic and Ginger are translucent, add

Turmeric, Cumin, Coriander, Cardamon, Crushed Chilies and Black Pepper; mix well.

· When all spices are absorbed shut off flame and let sit for 5 min, covered.

· Add Masala Mixture to water with mung beans and vegetables

· Simmer for 30-45 minutes until soupy

· Add rice and cook an additional 15-20 min until rice is absorbed

· Shut off and let set 15-20 min

· Serve with fresh yogurt or sour cream

For application on the affected areas

1T        Gram Flour

1/4 t     Hardi

1T        Butter Ghee

Apply to the affected areas, leave it on to soak and take a bath.

For internal Use

1t         Moong Dhal

1t         Barley Seeds

½ t       Methi Seeds

Soak for 24 hours and drain water.

Eat this on an empty stomach in the morning before breakfast

Continue doing this for 3 months.

ALLERGIES 

An allergy is a reaction to a substance that in non sensitive persons would produce no effect.  It is an antibody – antigen reaction that may be caused by the release of histamine or histamine-like substances from injured cells.  The offending substance is known as an allergen and can be anything that brings on the symptoms of an allergy. 

GENERAL RECOMMENDATIONS 

Food allergies should be identified, and problem foods should be avoided. Blood tests are more effective than the skin scratch test in identifying food allergies. Certain additives, such as aspartame (Nutra Sweet), monosodium, glutamate (MSG). and sulphites, can also cause allergic reactions.  In addition, an overgrowth of the east known as Candida albicans can cause a variety of food sensitivities. Either a blood test or stool culture can determine whether there is a yeast overgrowth present in the body. When this yeast overgrowth is brought under control, many people notice that their allergies and sensitivities have improved. Common Cold 

A cold is a viral infection of the upper respiratory tract. It is very contagious and can last for a long time.  Cold symptoms include congestion of nasal passages with a watery discharge, sneezing and headache. A cold may also be accompanied by a dry sore throat, fever, body aches, fatigue and chills. 

GENERAL RECOMMENDATIONS

The most effective method of preventing a common cold is to strengthen the immune system.  More than one or two colds a year signals weakened immunity. If frequent colds are experienced, it is advisable to be checked for food allergies. A poor diet, physiological and psychological stress, and drug use (including the use of alcohol, cigarettes and tobacco)  can all weaken the immune system. 

When a cold ‘catches’ you, there are steps you can take to shorten the recovery time. 

Get plenty of rest in bed : Jobs and other obligations often force us to neglect our body. But lack of rest can hinder the body’s defence mechanism and prolong infections. When you rest in bed, and especially when you sleep, powerful immune strengthening substances are released, enhancing the potency of your immune findings. 

Drink plenty of fluids : The mucous membranes lining the respiratory tract must be kept hydrated. When they become dry, they offer a desirable breeding ground for viruses. A moist respiratory tract repels viral infections. Use a vaporizer, facial mist spray, facial steamer and drink liquids throughout the day. 

Take warm ginger baths : Cut off several slices of ginger root and float them in a tub of warm water. Soak for about twenty minutes and have a cup of Ginger Tea while you relax in the bath. 

Take hot footbaths : Dissolve a tablespoon of mustard powder in a bucket of hot water and soak your feet for approximately ten minutes. Wrap your head in a towel at this time to increase your body heat.

Use lavender oil and eucalyptus oil to clear your throat and nose. : Put six to eight drops of lavender oil or eucalyptus oil in a large pan of boiling water and reduce heat to a simmer. Wrap your head in a towel and inhale.  These oils can be purchased at health shops and herbalists. Do not use this pregnancy. Use only half this amount of oil for children and not use for infants. 

DIATARY MODIFICATIONS

Avoid all sweets. Even fructose, honey, and orange juice have too much sugar.  Sugars depress the immune system. Limiting its ability to kill bacteria and viruses.  In addition, blood sugar and Vitamin C compete for entry into white blood cells.  All fruit juices – except orange juice, should be avoided – be diluted with at least equal parts of water. Vegetable juices are more beneficial than fruit juices. 

Increase your consumption of green juices, especially those high in Vitamin C. Make home-made vegetable soups and broths.  Drink herbal tea, especially ginger tea. 

Consume generous amounts of cayenne pepper, watercress, onions and garlic. A home remedy calls for chopping on garlic clove into tiny pieces and swallowing the garlic with a glass of water before bedtime.

Roll garlic in kale leaf, and put it into a juicer with tomato and celery. Place juice in a saucepan, add chopped collards, and gently heat. Garnish with croutons and have it fresh. It should not be stored in the fridge for future use.

Sparkling water 

Juice apple and lime. Pour the juice into a tall, ice-filled glass.

Mix ajwain (1 tsp) with a little bit of jaggery (1 tbsp). The mixture is a common remedy for deworming children as well as adult. Jaggery attracts the worm to come out and ajwain gets mixed with stomach acid and helps in killing worms.

Ulcerative Colitis

Ulcerative Colitis is an inflammatory bowel disease, which causes inflammation and ulceration of inner lining of the colon and rectum. The inflammation usually begins in the rectum and spreads upward to the entire colon. This disease can occur at any age but its onset is most common among people between ages of 15 – 40. Ulcerative colitis also appears to run in some families.

Causes

Autoimmune factors, food allergies, collagen disorders, genetic factors and infection are some of the factors that cause inflammation in cases of Ulcerative Colitis. According to Ayurveda, all the factors that imbalance Pitta are responsible for this problem. Ayurvedic Ulcerative Colitis Treatment

Known as Pittaj Grahani in Ayurveda, Ulcerative Colitis is primarily a disease of Pitta Dosha, with varying degrees of Vata involvement in some cases. The excessive consumption of Pitta-aggravating foods and lifestyle initially damages both rakta dhatu (blood tissue) and mamsa dhatu (muscle tissue), leading to formation of ama that gets deposited between the villi in the intestines, forming a smooth coating that impairs the normal function and immunity of the intestines. Vata Dosha in the lower colon is also aggravated and in the early stages blocks the Pitta and Kapha channels, causing inflammation, mucous accumulation and edema.

Ayurvedic treatment of Ulcerative Colitis involves gently eliminating the ama, restoring healthy digestion and creating a bacterially-friendly environment in the body. After the basic strength and immunity of the body is restored, the treatment focuses on natural healing of the ulcers.

Diet & Lifestyle Advice

Have soup prepared by boiling split gram (split legumes), buttermilk, and yogurt prepared from skimmed milk and goat’s milk.

Increase use of cumin seeds, coriander, and celery seeds in cooking.

Avoid whole peas and beans, broccoli, potato, garlic, jaggery, yam, sweet potato and other indigestible foods; fried, oily and highly salted foods; and fermented and packaged foods.

Improve eating habits by having food in calm surroundings without watching television, listening to music, or working on the computer. Chew the food properly and completely. Eat slightly less than your appetite.

Avoid tea, coffee, and alcohol.

Home Remedies

Have 1 glassful of buttermilk with ¼ teaspoon of turmeric powder (hardi), a pinch of roasted cumin seed powder (jeera), and rock salt to taste. Have this twice a day with breakfast and lunch. (Avoid having it with the evening meal.)

Mix powdered dried ginger root (adrak), black pepper (kala golmirich), and long pepper in equal amounts. Take ½ teaspoon of the powder with water twice a day. 

Make a powdered preparation of cloves (lawing), cinnamon, green cardamom (elachi), and asafoetida (hing) . Have 1 teaspoon of this powder twice a day with water.

All you need to do is to roast some methi seeds and crush them in a mortar and pestle to make a fine powder. Ingest some powder with water first thing in the morning on an empty stomach. You can also soak the seeds in water overnight. Drink the water and chew the soaked seeds on an empty stomach.

Dalchini (Cinnamon)

Dalchini or cinnamon helps in stimulating the body’s metabolism, which further helps in cutting the belly fat. According to a study published in the Journal of Nutritional Science and Vitaminology, cinnamaldehyde in cinnamon stimulated metabolism of the fatty visceral tissue, which means it could be helpful in cutting belly fat. Drink a cupful of cinnamon tea first thing in the morning or as suggested by the doctor.

Kalonji (Nigella Sativa):

Kalonji has wide range of uses and one of such is weight loss and controlling obesity. It is a rich source of fiber. Nigella seeds contain nigellone, which helps in controlling obesity. You can have kalonji, as a spice, in your daily diet.

Aloe vera:

This nutritionally dense plant has some active compounds that promote weight loss. It is usually consumed in the form of aloe vera juice, which is made mixing the gel of the plant with water. The aloe vera gel contains a complex carbohydrate known as acemannan, which facilitates the absorption of nutrients by the cells, nourishes them and also helps detoxify them. It helps in boosting metabolism, aiding weight loss.

Pepper:

Black pepper is a storehouse of health benefits and effective weight loss and metabolism is one of them. Ajwain (Carom seeds):

Ajwain works as a natural antioxidant which removes toxic build ups from the body, promoting weight loss. This seed also speeds up body metabolism. You can soak ajwain in water over-night, then boil, strain and have the water in the morning.
